I mean ’tis the season for all things pumpkin spice. And this pumpkin-bread-like-muffin’s got it all… rich in vitamin A, fiber-filled chickpeas, omega-rich flaxseed, and protein! These are a flourless sweet treat you can feel good about indulging in. I love them as a pre-workout snack and you won’t feel guilty for savoring it because they are delectable & HEALTHY!

- 1 can pumpkin puree I used Trader Joe's
- 3 whole egg whites
- 1/2 C unsweetened cinnamon apple sauce
- 1/2 C unsweetened vanilla almond milk
- 1/4 C ground flaxseed
- 1/2 C chickpea flour or oat flour
- 2 scoops protein powder I used Orgain Organic Vanilla Plant-Based Protein
- 2 TBS stevia optional
- 2 TBS fig butter
- 1 TBS pumpkin pie spice
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. cloves
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
